It is prepared from the fruit of the apple tree (Malus domestica), whose ancestor originated in Central Asia, domesticated for over 15,000 years. Specifically, we use the variety Golden Delicious, whose cultivation began in the United States back in 1890.
First we wash, peel and cut the apples in fine slices. Then we proceed to cook them on a very low flame.
As this product is rather sour and not very sweet, it pairs very well with roasted meat, both white and red, hunting dishes and all goose and duck derivatives. With anchovies, it is simply exquisite.
