Extra Berry Jam

We make it from the mixture of the following fruit and infruitesence:

The fruit of cassis (Ribes nigrum), or blackcurrant. Unknown in Europe until it was brought to France in the 19th century.

The fruit of the currant (Ribes rubrum), the redcurrant. Originated in Eastern Europe.

The fruit of the blueberry tree (Vaccinium myrtillus). Originated in the northern areas of Europe, North America and Asia.

The frutescence from (Fragaria x ananassa), the strawberry, is a hybrid originated in Brest, France, where it began to be cultivated in 1766. It resulted from the accidental cross between the (Fragaria virginiana) –from eastern North America—and remarkable for its fine flavor, and the (Fragaria chiloensis)---from Chile—known for its great size.

The infrutescence of the blackberry bush (Rubus ulmifolius), the blackberry. Originated throughout the whole European country, north of Africa and southern Asia.

The infrutescence of the raspberry bush (Rubus idaeus), the raspberry. Originated in Europe and northern Asia.

We wash and mix the six ingredients, we add sugar and cook on a low flame.

This jam’s taste is not very sweet and rather sour, suitable for meat, foie, patisserie and fresh cheese.
