It combines the fruit of the orange tree (Citrus x sinensis) and the fruit of the bitter orange tree or Seville orange (Citrus x aurantium).
We wash the two orange types, peel them and cut them into cubes or slices. They are mixed in the right proportion and, after adding the sugar, they are cooked on a low flame.
We obtain a bright orange-colored jam, not very sweet and rather sour in taste. These characteristics make it ideal for free range birds--especially duck—and fresh cheese.
