The fruit of the olive tree (Olea europaea subsp.europaea), the olive. Originated in the Mediterranean basin.
We wash them and cut them, add a little sugar, and cook on a low flame. Just before they are done we crush them to obtain an oily cream.
This jam is ideal as a salad dresser; also pairs very well with smoked meats, anchovies, fish, free range birds, and all sorts of cheese.
Sizes: glass jars of 310 gr. and 1 Kg.
