The fruit of the fig tree (Ficus carica), Col de Dame variety, is not actually a fruit, but an infrutescence. It originated in the Middle East and was gathered before the year 9000 B.C.
We wash them and cut them into slices; we add the sugar and cook it on a very low flame, stirring often.
This jam pairs with the greatest number of dishes; it may go with grilled or barbecued red meat, free range birds---mainly duck and goose derivatives---and several cheese varieties.
