It is made from the pepper (Capsicum annum, var. Grossum). Like all peppers, it comes from America.
We wash them and cut them into strips; we add sugar and cook slowly. Just before it is done we proceed to crush them in order to give it a fine, creamy texture.
This jam pairs well with cod dishes and smoked fish, also with barbecued or roasted meat.
