We make it from the fruit of the peach tree (Prunus pérsica), originated in China. First brought by the Persians and later by the Romans—the yellow flesh variety, firmer and a little sourer.
We wash the peaches, hand-peel them and cut into dices. We then add the sugar and place it to cook on a low flame.
This jam has a very fleshy texture and a strong taste, ideal for breakfast”.
