It is prepared from the fruit of the Anco or Pumpkin (Cucubrita moschata), originated in America and arriving in Europe after Columbus’ journeys, together with the fruit of the orange tree (Citrus x sinensis), the orange (which is a hybrid crop from ancient times, possibly a result of combining the grapefruit or (Citrus maxima) with the tangerine or (Citrus reticulata).
We wash and peel the pumpkins and oranges. They are then chopped, sugar is added and everything is cooked on a low flame.
The result is a strong orange-colored jam, with a fine texture and rather sharp taste, which goes perfectly with fresh cheese.
