It is made from the pepper (Capsicum annum, var. Grossum). Like all peppers, it comes from America.
We wash them and cut them into strips; we add the sugar and cook slowly. Just before it is done we proceed to crush them in order to give it a fine, creamy texture.
It is ideal for white and red meat, fish and cod. It goes very well with all sorts of cheese.
