It is prepared from the fruit of the tomato tree (Solanum lycopersicum) or (Lycopersicon esculentum), originated in the Andes. It arrived to Europe and began to be cultivated in the late 16th century.
Ripened in the plant, we obtain very fleshy tomatoes, sweeter, less sour and, therefore, tastier. We blanch them, peel them and deseed them before they are cooked.
It is one of our most popular jams due to its texture and natural flavor. A referent in the Mediterranean cuisine which may be combined with a lot of dishes; from salads to cheese, and all sorts of meat and fish.
